Люблю баклажаны в разных вариантах. И закуску из баклажанов люблю и, конечно, икру. Но особенно люблю печеные баклажаны. Пересмотрела много рецептов закуски из баклажанов и выработала свой.

Плотненькие баклажаны моем, нарезаем на кружки толщиной примерно 1 см, солим и оставляем на полчаса, чтобы ушла горечь. Затем хорошо промываем в холодной воде. Меленько нарезаем шампиньоны, солим и жарим их на растительном масле. Помидоры нарезаем кружками немного тоньше, чем баклажаны. Мелко рубим чеснок и смешиваем со сметаной. Форму для запекания смазываем сливочным маслом и выкладываем на нее кружочки баклажанов, на них грибы, сверху кружочки помидоров, сверху смазываем сметаной и посыпаем тертым сыром. Запекаем примерно 35 минут при 180 градусах. Выкладываем на листья салата и посыпаем укропом.
